It is a poor simple cake, made with readily available ingredients even in the humble peasant houses but the preparation and consumption were a common heritage of all citizens. A nice “treaty” about “caciù” was written by a dialect poet.
Ingredients puff pastry
1 kg of flour 00, 5 eggs , 5 teaspoons of olive oil, wine (an half egg shell 10 times), salt q.s.
Filling ingredients:
Peeled fava bean, sugar, lemon juice, cinnamon (variant with cocoa: cocoa, rhum)
Procedure
Preparation of the dough:
Mix all the ingredients and roll the dough very thin by hand with a rolling pin. It is recommended to let the pastry rest before rolling the dough.
The final product:
Cut the pastry into 12 cm diameter rounds. Put in the middle a little bit of filling and fold the rounds into halves, closing the flaps and pressing them with a fork. Fry in copious olive or or peanut oil.
